Recipe for Cranberry Lemon Cookies

I just wanted to share this recipe for delicious and healthy Cranberry Lemon cookies.  This recipe makes 24 cookies (although I doubled it in order to have plenty to give as gifts).

Nutrition info per cookie: 104 calories, 5 g. fat, 1 g. sat. fat, 13 g. carbs, 1 g. protein, 1 g. fiber, 95 mg. sodium


1 1/3 cups brown rice flour

1/4 cup ground flax seed

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. sea salt

1/2 cup olive oil

1/4 cup unsweetened applesauce (I’ve also used very ripe mashed pears)

1/4 cup honey

1/4 cup fresh lemon juice plus the grated zest of 1 lemon

2 large eggs, beaten

1/2 tsp. vanilla

1 cup dried cranberries

Preheat the oven to 275 degrees.  Line two cookies sheets with parchment paper.

In a medium bowl whisk together the brown rice flour, ground flax seeds, baking soda, baking powder, and salt.

In a large bowl whisk together the oil, applesauce, honey, lemon juice, lemon zest, eggs, and vanilla.  Add the flour mixture and stir just until blended.  Stir in the cranberries.

Use a tablespoon or cookie scoop to scoop the batter onto the cookie sheets.  Using damp fingers flatten slightly.  Bake 12 to 15 minutes until slightly golden on top.  Cool on a wire rack.

I can tell you that these cookies are a real hit with my boyfriend, and the fact that they are so healthy is a real plus!  You can also play around with the ingredients, adding nuts or other dried fruit for some variation.  Next time I make them I think I’ll try adding some poppy seeds.
